Instant Pot Keto Tuscan Soup

 

Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 1 medium yellow onion, peeled and diced
  • 3 cloves garlic, minced
  • 1 lb hot or regular Italian sausage, store-bought or homemade
  • 2 teaspoons Italian seasoning
  • 6 cups reduced sodium chicken broth or bone broth
  • 4 medium russet potatoes, cut into 1/2 inch cubes (for a low carb option, substitute with cauliflower florets)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper flakes
  • 4 cups kale, stemmed and chopped
  • 1 cup full-fat unsweetened coconut cream or cashew cream
  • 1 tablespoon tapioca flour or arrowroot flour

Instructions

  1. Heat olive oil in a large Dutch oven or stock pot over medium-high heat until hot and shimmering. Add diced onion and cook for 2-3 minutes until softened.

  2. Add minced garlic and cook for another minute until fragrant.

  3. Add Italian sausage and Italian seasoning. Cook, breaking up the sausage with a spoon, until no longer pink.

  4. Pour in the chicken broth and add the cubed potatoes (or cauliflower), kosher salt, and crushed red pepper flakes. Bring the soup to a boil over high heat, then reduce the heat to medium-low and simmer for 10 minutes, or until the potatoes are tender.

  5. Stir in the chopped kale and coconut cream.

  6. In a small bowl, combine tapioca flour (or arrowroot flour) with a splash of water to create a slurry. Stir until dissolved, then pour the slurry into the soup, stirring continuously.

  7. Increase the heat to medium-high and continue to cook for 3-4 minutes, or until the soup thickens slightly and the kale wilts.

  8. Taste the soup and adjust seasoning with additional salt and red pepper flakes as needed.
