Mexican Scrambled Eggs



INGREDIENTS:
- 2 eggs
- 1 small onion
- 1 tomato, diced
- 1 tablespoon finely chopped Jalapeno or Serrano pepper
- ½ red pepper
- 1 tablespoon vegetable oil
- Salt to taste

INSTRUCTIONS:
1. Begin by chopping the onion, slicing the red pepper, and dicing the tomatoes.
2. Preheat a skillet over medium to high heat and add the vegetable oil.
3. Add the chopped onion, red pepper, and Jalapeno or Serrano pepper to the skillet. Stir until they become soft and translucent, approximately 2 minutes.
4. Add the diced tomatoes and continue stirring for another minute.
5. Crack the eggs into a small bowl and lightly whisk them. Pour the eggs over the vegetables.
6. Using a spatula or wooden spoon, gently stir the eggs into the vegetables.
7. Season with salt to taste.
8. Cook the eggs for 2 minutes, then serve immediately.
