Mushroom, Shallot and Herbed Goat Cheese Tarts

 

### Ingredients:

- 10 (4-inch) squares of puff pastry sheets (see notes)

- 8 oz mushrooms, sliced (any kind)

- 1 shallot, finely chopped

- 3 garlic cloves, minced

- 1/3 cup parsley leaves, roughly chopped

- 2 tablespoons olive oil, divided

- 1/4 cup grated Parmesan cheese

- 4 oz goat cheese

- 1/4 teaspoon each of sage, thyme, rosemary, salt, and pepper

- 1/4 cup white wine (can substitute with chicken broth)

- 1 egg, whisked (for egg wash)


### Instructions:


1. **Preheat Oven:**

   - Preheat the oven to 400°F (200°C). Prepare two large baking pans.


2. **Prepare Puff Pastry:**

   - Arrange the 4-inch square puff pastry sheets on the baking pans, leaving space between each (no more than 6 squares per pan). Use a fork to poke small holes on the surface of each square, ensuring not to pierce through the dough completely.


3. **Prepare Mushroom Filling:**

   - Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shallot and garlic, sauté for 1-2 minutes until fragrant.

   - Add the sliced mushrooms, remaining tablespoon of olive oil, sage, thyme, rosemary, salt, and pepper. Cook for another 2 minutes.

   - Pour in the white wine and cook for 4-5 minutes until most of the liquid has evaporated.


4. **Combine Ingredients:**

   - Remove skillet from heat. Stir in goat cheese, Parmesan cheese, and chopped parsley until the cheeses melt and the mixture thickens.


5. **Assemble and Bake:**

   - Spoon generous portions of the mushroom mixture onto each puff pastry square. Optionally, pinch the edges of the pastry to create decorative shapes (such as pinching each corner or two sides to form a boat shape).

   - Brush the exposed edges of the puff pastry squares with the whisked egg wash (avoiding the filling).

   - Bake in the preheated oven for 25-30 minutes, or until the puff pastry turns golden brown and puffs up.


6. **Serve:**

   - Remove from oven and let cool slightly before serving. Enjoy warm!


### Notes:

- Use pre-cut frozen puff pastry squares that are approximately 4 inches by 4 inches. Ensure the puff pastry is completely thawed if frozen (overnight in the fridge or at room temperature for at least two hours).

- Brands like Bakara offer convenient pre-cut puff pastry squares, but any similar brand will work well.
