Quick & EASY Roasted Parmesan Zucchini

 

Ingredients


  • 2 medium zucchini, sliced into 1/4 to 1/2-inch rounds
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup freshly grated Parmesan cheese (pre-shredded is also fine)

Instructions


  1. Preheat the oven to 450°F (230°C). Line a baking sheet with foil for easier cleanup, if desired.

  2. Place the zucchini slices on the prepared baking sheet and drizzle with olive oil. Toss the slices until they are evenly coated with oil. Spread them out in a single layer.

  3. Season the zucchini slices generously with salt and pepper.

  4. Sprinkle each zucchini slice with grated Parmesan cheese.

  5. Bake on the center rack of the oven for about 10 minutes, or until the zucchini is just fork-tender.

  6. Switch the oven to broil on high. Broil the zucchini slices for 2 to 3 minutes, or until the cheese is bubbly and lightly browned.

  7. Remove from the oven and serve immediately.
