SOUR CREAM AND ONION CHICKEN

 

Ingredients

  • 2 chicken breasts, cut in half lengthwise to make 4 thinner pieces
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 1 medium onion, sliced
  • 1 clove garlic, minced
  • 1/2 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 cup full-fat sour cream
  • Fresh chopped parsley, optional, for garnish

Instructions

  1. Sprinkle the chicken breasts with garlic powder, salt, and pepper.

  2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat until hot.

  3. Add the chicken to the skillet and cook for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Transfer the cooked chicken to a plate.

  4. Reduce the heat to medium. Add the remaining tablespoon of butter and sliced onion to the skillet. Sauté the onion until softened and lightly browned, about 10-15 minutes, adjusting heat as needed to prevent burning.

  5. Stir in the minced garlic and cook for 30 seconds until fragrant.

  6. Pour in the chicken broth and Worcestershire sauce, scraping up any brown bits from the bottom of the pan.

  7. Stir in the sour cream until the sauce is smooth. Let it heat through for a couple of minutes, being careful not to let it bubble vigorously to avoid curdling.

  8. Return the cooked chicken to the skillet and spoon some sauce over the top. Heat together for another minute to ensure the chicken is warmed through.

  9. Season with additional salt and pepper to taste, if needed.

  10. Garnish with chopped parsley if desired, and serve the chicken with the creamy sauce immediately.
