Ingredients:
- 4-6 strips bacon, cut into 1-inch pieces
- 20 oz refrigerated potatoes or 3-4 cups frozen hash browns
- 1/2 cup sweet onion, diced (optional)
- 1/2 cup red bell pepper, diced (optional)
- 8-10 sausage links, cooked and chopped
- Salt and pepper, to taste
- 4 eggs
- 1 cup shredded cheddar cheese (or your favorite cheese)
- Toppings (optional): sliced green onions, sliced tomatoes, sliced avocado, sliced jalapenos (seeds removed), chopped parsley
Instructions:
Cook Bacon:
- In a large skillet or cast iron skillet, cook the bacon pieces over medium heat until crispy. Remove the cooked bacon from the pan and place on a paper towel-lined plate to drain excess grease. Set aside.
Cook Potatoes:
- If using refrigerated potatoes, add them to the skillet and cook according to package instructions until they are browned and crispy. If using frozen hash browns, cook them until they are thawed and beginning to brown.
Add Vegetables (Optional):
- If using, add the diced sweet onion and red bell pepper to the skillet with the potatoes. Cook until the vegetables are tender, about 5 minutes.
Add Sausage:
- Stir in the chopped cooked sausage links and the reserved cooked bacon. Heat everything through, ensuring the sausage is warmed.
Season:
- Season the skillet mixture with salt and pepper to taste.
Cook Eggs:
- Create wells in the skillet mixture (indentations with a spoon) and carefully crack one egg into each well. This allows the eggs to cook within the skillet.
- Cover the skillet and cook over medium-low heat until the whites of the eggs are set and the yolks are cooked to your desired level of doneness, about 8-10 minutes.
Add Cheese:
- Sprinkle the shredded cheddar cheese (or your preferred cheese) evenly over the skillet. Cover again and let the cheese melt, which usually takes just a couple of minutes.
Serve:
- Once the cheese has melted, remove the skillet from heat. Serve the breakfast skillet immediately, garnished with your choice of toppings such as sliced green onions, tomatoes, avocado, jalapenos, and parsley.
Storage:
- Any leftovers can be stored in the refrigerator. Simply reheat in the microwave or on the stovetop before serving.
