You need to try this Breakfast Club Sandwich!


 Ingredients:
  • 8 slices thick-cut bacon
  • 1 pound ground pork sausage, divided into 4 patties
  • 4 slices mild cheddar cheese
  • 1 tablespoon unsalted butter
  • 8 large eggs, beaten
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 12 slices white bread, toasted
  • 1 large avocado, pitted, peeled, sliced
  • ¾ cup cowboy butter, softened, divided (recipe below)

Instructions:

Cooking the Bacon:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil.
  2. Arrange the bacon slices in a single layer on the lined baking sheet.
  3. Bake for 25-30 minutes until the bacon is crispy.
  4. Transfer the cooked bacon to a plate lined with paper towels to drain excess grease.

Cooking the Sausage Patties:

  1. Divide the ground pork sausage into 4 equal portions. Shape each portion into a patty slightly larger than your bread slices.
  2. Heat a medium skillet over medium heat. Cook the sausage patties for 3-4 minutes per side until browned and cooked through (internal temperature of 160°F or 71°C).
  3. Place a slice of cheddar cheese on each patty in the skillet to melt slightly. Remove patties to a plate lined with paper towels to drain.

Scrambling the Eggs:

  1. Using the same skillet, wipe it with paper towels and return it to medium heat. Add butter to melt.
  2. Pour in beaten eggs and season with salt and pepper. Stir gently until eggs begin to set, then allow them to form large soft curds. Cook until eggs are thickened but still moist. Remove from heat.

Assembling the Sandwiches:

  1. Spread 1 tablespoon of softened cowboy butter on one side of each toasted bread slice.
  2. On one slice, place a sausage patty (cheese side up) on top of the buttered side.
  3. Top with another slice of toasted bread (buttered side up).
  4. Layer two slices of cooked bacon on top of the second bread slice.
  5. Add avocado slices and about ½ cup of scrambled eggs.
  6. Top with a final slice of toasted bread (buttered side down).

Finishing:

  1. Cut each sandwich into four triangles and secure with toothpicks.
  2. Repeat for the remaining sandwiches.
  3. Serve immediately.

Cowboy Butter Recipe:

  • Mix together softened butter with chopped parsley, garlic, lemon juice, salt, and pepper to taste. Adjust seasoning as desired.
