Cowboy Beans

 

Ingredients:

  • 1 pound ground beef
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 green bell pepper, diced (about 1 cup)
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 8 slices bacon, cooked and crumbled
  • ¼ cup brown sugar (optional)
  • 2 cans (28 ounces each) baked beans (such as Bush's Original Baked Beans)
  • ½ cup barbecue sauce
  • 2 tablespoons Dijon mustard

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a 4-quart heavy-bottomed oven-safe pot (like a Dutch oven), cook ground beef, onion, bell pepper, garlic salt, and onion powder over medium heat until the ground beef is no longer pink. Drain any excess liquid.
  3. Add cooked bacon crumbles, brown sugar (if using), baked beans, barbecue sauce, and Dijon mustard to the pot. Stir well to combine all ingredients.
  4. Cover the pot and bake in the preheated oven for 1 hour. 
  5. The baked beans should be hot, bubbly, and thickened when done.
  6. Serve warm.
