Creamy Coconut Lime Chicken

Ingredients:

  • 2 lb. boneless, skinless chicken breasts (about 4 chicken breasts) πŸ—
  • ΒΌ cup all-purpose flour 🌾
  • ΒΌ cup chopped cilantro, plus more for topping 🌿
  • 2 tablespoons coconut oil πŸ₯₯
  • 1 tablespoon olive oil πŸ«’

  • 1 cup coconut milk πŸ₯₯
  • β…” cup chicken broth πŸ—
  • 1 tablespoon brown sugar (or substitute coconut sugar) 🍚

Instructions:

  1. Preheat oven to 375°F (190°C). 🌑️

  2. Heat a large, oven-safe skillet or dutch oven over medium heat. Add the coconut oil and olive oil. 🍳

  3. In a bowl, combine the flour and chopped cilantro. Dredge each chicken breast in the mixture until coated, then place them directly into the hot skillet. Pan-sear the chicken for 3-4 minutes per side, or until slightly browned. Add minced garlic during the last 30 seconds of cooking. 🍲

  4. While the chicken is searing, mix together the coconut milk, chicken broth, brown sugar, and juice from 1 lime in a bowl. πŸ₯£

  5. Remove the skillet from the heat. Pour the coconut milk mixture over the chicken in the skillet. Place the skillet into the preheated oven and bake for 10-15 minutes, or until the chicken reaches an internal temperature of 165Β°F (74Β°C). πŸ—
