Ingredients:
- 1 pound (450g) fettuccine pasta
- 2 tablespoons olive oil
- 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 1 cup chicken broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Fresh parsley, chopped, for garnish
Instructions:
Cook the Pasta:
- Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
Cook the Chicken:
- Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper. Add them to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Make the Sauce:
- In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Add Cream and Cheese:
- Stir in heavy cream, Parmesan cheese, dried Italian seasoning, and red pepper flakes (if using). Bring the sauce to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
Combine Pasta and Sauce:
- Add cooked fettuccine pasta to the skillet with the sauce. Toss well to coat the pasta evenly with the sauce.
Add Chicken and Serve:
- Gently stir in the cooked chicken pieces. Cook for an additional 2-3 minutes until everything is heated through. Taste and adjust seasoning with salt and pepper if needed.
Serve:
- Garnish with chopped fresh parsley and additional grated Parmesan cheese if desired. Serve hot and enjoy!
