Grilled Chicken Caprese

 

Ingredients:

  • 4 boneless, skinless chicken breasts (pounded to an even thickness)
  • 2 tablespoons olive oil (plus extra for grilling)
  • 1-2 teaspoons seasoned salt
  • 1 teaspoon freshly cracked black pepper
  • 4 half-inch thick slices of fresh mozzarella cheese
  • 10 ounces cherry tomatoes, sliced
  • 2 tablespoons balsamic glaze
  • 2 tablespoons thinly sliced fresh basil

Instructions:

  1. Prepare the Grill:

    • Heat a grill to medium-high heat, setting it up for indirect cooking.
  2. Season and Grill the Chicken:

    • Brush the chicken breasts with olive oil and season evenly with seasoned salt and black pepper.
    • Brush the grill grates with olive oil or use a non-stick grill spray. Place the seasoned chicken breasts on the grill and cook for about 6 minutes per side, or until the internal temperature reaches 155°F (70°C). Cooking time may vary depending on the thickness of your chicken breasts.
  3. Add Mozzarella and Melt:

    • Place a slice of mozzarella on top of each chicken breast during the last 1-2 minutes of grilling, allowing it to melt. Keep a close eye to prevent the cheese from melting excessively or sliding off.
  4. Rest the Chicken:

    • Remove the chicken from the grill and transfer to a plate. Loosely cover with foil and let it rest for 5-10 minutes. This resting period allows the chicken to finish cooking and retains its juices.
  5. Prepare Balsamic Tomatoes:

    • In a small bowl, gently combine the sliced cherry tomatoes with balsamic glaze.
  6. Serve:

    • To serve, place each mozzarella-topped chicken breast on a plate. Top generously with the balsamic tomatoes mixture and sprinkle with thinly sliced fresh basil.
  7. Enjoy:
