Slutty Cheesecake Bars

 

Ingredients:

  • Cookie Layer:

    • 17.5-ounce package chocolate chip cookie mix
    • ½ cup (1 stick) salted butter, softened
    • 1 large egg
    • 24 Oreos
  • Cheesecake Layer:

    • 16 ounces (2 8-ounce packages) cream cheese, softened
    • 1 ⅓ cups powdered sugar
    • 1 tablespoon cornstarch
    • ⅔ cup sour cream
    • 2 large eggs
    • 1 ⅓ cups rough-chopped Oreos, divided
    • Caramel sauce (optional, for garnish)

Instructions:

  1. Prepare the Pan:

    • Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or spray with non-stick cooking spray.
  2. Make the Cookie Layer:

    • In a large mixing bowl, use a hand mixer to beat together the chocolate chip cookie mix, softened butter, and egg until well combined.
    • Press the cookie dough into the bottom of the prepared pan in an even layer.
  3. Add the Oreos:

    • Place the Oreos evenly over the top of the cookie dough layer.
  4. Prepare the Cheesecake Layer:

    • In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and cornstarch with a hand mixer until light and fluffy.
    • Mix in the sour cream until smooth.
    • Add the eggs one at a time, mixing just until fully incorporated after each addition.
    • Fold in ⅔ cup of the chopped Oreos.
  5. Assemble the Bars:

    • Spread the cheesecake mixture evenly over the Oreos in the pan.
    • Sprinkle the remaining ⅓ cup of chopped Oreos over the top of the cheesecake layer.
  6. Bake:

    • Bake in the preheated oven for 35-40 minutes, or until the cheesecake layer is just set and reaches around 150°F (65°C) when checked with a thermometer.
  7. Cool and Chill:

    • Remove the bars from the oven and place them on a wire rack to cool to room temperature.
    • Once cooled, cover the pan with plastic wrap and refrigerate for at least 3 hours, or until fully chilled.
  8. Serve:

    • When ready to serve, remove the bars from the pan and cut into squares.
    • Drizzle with caramel sauce if desired.

Notes:

  • Nutritional Value: Does not include caramel sauce.
  • Cream Cheese: Ensure it is at room temperature for a smooth texture.
  • Chilling: Bars must chill for at least 3 hours to set properly.
  • Cutting: Use a hot knife to achieve clean cuts.
  • Freezing: These bars can be frozen. See instructions above for freezing and reheating.
  • Variations: Consider switching up Oreo flavors or adding nuts or chocolate chips to the batter or on top before baking for extra flavor.
