Breakfast Baked Sweet Potatoes with Almond Butter, Banana & Chia

Ingredients:

  • 2 medium DOLE sweet potatoes, washed
  • 2 tablespoons natural almond butter
  • 1 DOLE banana, sliced
  • 2 teaspoons chia seeds
  • Cinnamon (to taste)
  • Sea salt (to taste)

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).
    • Line a medium baking sheet with parchment paper or foil.
  2. Roast Sweet Potatoes:

    • Use a fork to poke several holes in the sweet potatoes.
    • Place the sweet potatoes on the prepared baking sheet.
    • Roast in the oven for 45 minutes to 1 hour, or until tender when pierced with a fork.
    • Remove from the oven and let cool for 5-10 minutes.
  3. Prepare and Serve:

    • Once cool enough to handle, split the sweet potatoes open with a knife.
    • Sprinkle with a small pinch of sea salt.
    • Drizzle each sweet potato with 1 tablespoon of almond butter.
    • Sprinkle 1 teaspoon of chia seeds on each.
    • Top with banana slices and a sprinkle of cinnamon.
    • Serve immediately.
