Show stopper oatmeal with caramelised bananas


Ingredients

For Basic Oatmeal:

  • ½ cup (gluten-free) porridge oats
  • 1 cup nut milk of choice
  • 1 tsp chia seeds or flax seeds
  • 1 tsp maple syrup
  • ¼ tsp ground cinnamon

For Caramelised Bananas:

  • 1 banana
  • 1 tsp coconut oil
  • 2 tbsp maple syrup

Oatmeal Toppings:

  • A handful of raspberries
  • 1 tbsp pomegranate seeds
  • 1 tsp smooth nut butter
  • A sprinkle of homemade granola

Instructions

  1. Prepare the Oatmeal:

    • Combine oats, nut milk, chia or flax seeds, maple syrup, and ground cinnamon in a bowl. Mix well.
    • Refrigerate overnight.
    • For a hot oatmeal, warm it up in the microwave or on the stove with additional milk if needed.
  2. Caramelise the Bananas:

    • Heat coconut oil in a frying pan over medium heat.
    • Slice the banana and place it in the pan, ensuring space between slices.
    • Fry for 2-3 minutes until golden brown, then flip and fry the other side for another 2-3 minutes.
    • Add maple syrup and cook for an additional 1-2 minutes until syrup thickens.
  3. Assemble the Oatmeal:

    • Spoon the oatmeal into bowls.
    • Top with caramelised bananas, raspberries, pomegranate seeds, nut butter, and granola.
