Ingredients
For Basic Oatmeal:
- ½ cup (gluten-free) porridge oats
- 1 cup nut milk of choice
- 1 tsp chia seeds or flax seeds
- 1 tsp maple syrup
- ¼ tsp ground cinnamon
For Caramelised Bananas:
- 1 banana
- 1 tsp coconut oil
- 2 tbsp maple syrup
Oatmeal Toppings:
- A handful of raspberries
- 1 tbsp pomegranate seeds
- 1 tsp smooth nut butter
- A sprinkle of homemade granola
Instructions
Prepare the Oatmeal:
- Combine oats, nut milk, chia or flax seeds, maple syrup, and ground cinnamon in a bowl. Mix well.
- Refrigerate overnight.
- For a hot oatmeal, warm it up in the microwave or on the stove with additional milk if needed.
Caramelise the Bananas:
- Heat coconut oil in a frying pan over medium heat.
- Slice the banana and place it in the pan, ensuring space between slices.
- Fry for 2-3 minutes until golden brown, then flip and fry the other side for another 2-3 minutes.
- Add maple syrup and cook for an additional 1-2 minutes until syrup thickens.
Assemble the Oatmeal:
- Spoon the oatmeal into bowls.
- Top with caramelised bananas, raspberries, pomegranate seeds, nut butter, and granola.
