Caramelized Banana Oatmeal


Ingredients:

Oatmeal:

  • 1 cup rolled/old-fashioned oats
  • 2 cups non-dairy milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt

Bananas:

  • 2 bananas, sliced into disks
  • 1-2 tablespoons refined coconut oil
  • 2 tablespoons maple syrup (plus more for topping, if desired)

Instructions:

  1. Cook oatmeal: Add oats, non-dairy milk, cinnamon, salt, and vanilla to a pot. Bring to a boil, then reduce heat and simmer until thickened.
  2. Caramelize bananas: Add coconut oil and maple syrup to a large sauté pan. Once sizzling, add sliced bananas. Cook for 5 minutes per side, or until golden brown.
  3. Assemble: Top cooked oatmeal with caramelized bananas and additional maple syrup, if desired.
  4. Serve: Enjoy with cinnamon, crushed walnuts, pecans, or nut butter.
