Hearty Avocado and Egg Oatmeal


Ingredients:

  • 4 eggs
  • 2 avocados
  • 2 cups chopped white mushrooms
  • 1 sweet onion (chopped)
  • 1 red bell pepper (chopped small)
  • 1/2 jalapeno (chopped small)
  • 2-3 cloves of garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups Kodiak Cakes Protein Oats
  • 3 1/4 cups chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1 1/2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 tablespoons chipotle aioli

Instructions:

  1. Sauté onions and peppers in olive oil.
  2. Add butter, mushrooms, jalapeño, garlic, and seasonings. Sauté for 5 minutes.
  3. Add chicken broth and oats. Simmer for 10 minutes, or until oats are soft.
  4. Remove from heat and stir in shredded cheese.
  5. Cook eggs over easy.
  6. Plate oatmeal, top with egg, avocado slices, and chipotle aioli.
