Ingredients:
- 4 eggs
- 2 avocados
- 2 cups chopped white mushrooms
- 1 sweet onion (chopped)
- 1 red bell pepper (chopped small)
- 1/2 jalapeno (chopped small)
- 2-3 cloves of garlic (minced)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups Kodiak Cakes Protein Oats
- 3 1/4 cups chicken broth
- 1/2 cup shredded cheddar cheese
- 1 1/2 tablespoons butter
- 1 tablespoon olive oil
- 4 tablespoons chipotle aioli
Instructions:
- Sauté onions and peppers in olive oil.
- Add butter, mushrooms, jalapeño, garlic, and seasonings. Sauté for 5 minutes.
- Add chicken broth and oats. Simmer for 10 minutes, or until oats are soft.
- Remove from heat and stir in shredded cheese.
- Cook eggs over easy.
- Plate oatmeal, top with egg, avocado slices, and chipotle aioli.
