Ingredients
- ½ Cup (125 ml) firmly packed pitted dates
- ½ Cup (125 ml) hot water
- 3 tablespoons peanut or almond butter
- 1 ½ teaspoons vanilla paste
- 2 Cups (500 ml) oats
- 1 Cup (250 ml) mixed chopped nuts
- ½ Cup (125 ml) mixed seeds
- ½ teaspoon coarse sea salt
Instructions
- Preheat the oven to 160°C (325°F).
- Soak the dates in hot water for 10 minutes.
- Blend the soaked dates and water in a food processor until smooth. Add peanut or almond butter and vanilla paste, then blend until combined.
- In a large bowl, mix the oats, chopped nuts, seeds, and sea salt. Stir in the date mixture until everything is well combined.
- Pour the granola onto a parchment-lined baking sheet, spreading it into an even layer.
- Bake for 25-30 minutes, stirring once halfway through.
- Let the granola cool completely before transferring it to an airtight container for storage.
