Healthy Salted Caramel Granola


Ingredients

  • ½ Cup (125 ml) firmly packed pitted dates
  • ½ Cup (125 ml) hot water
  • 3 tablespoons peanut or almond butter
  • 1 ½ teaspoons vanilla paste
  • 2 Cups (500 ml) oats
  • 1 Cup (250 ml) mixed chopped nuts
  • ½ Cup (125 ml) mixed seeds
  • ½ teaspoon coarse sea salt

Instructions

  1. Preheat the oven to 160°C (325°F).
  2. Soak the dates in hot water for 10 minutes.
  3. Blend the soaked dates and water in a food processor until smooth. Add peanut or almond butter and vanilla paste, then blend until combined.
  4. In a large bowl, mix the oats, chopped nuts, seeds, and sea salt. Stir in the date mixture until everything is well combined.
  5. Pour the granola onto a parchment-lined baking sheet, spreading it into an even layer.
  6. Bake for 25-30 minutes, stirring once halfway through.
  7. Let the granola cool completely before transferring it to an airtight container for storage.
