Ingredients
- 4 burrito-size flour tortillas
- 1 cup thick salsa
- 2 large eggs
- 1/2 cup grated Mexican-blend cheese
- 1 tablespoon extra virgin olive oil
- 1 cup cherry tomatoes
- 1 small avocado, pitted and sliced
- 1/4 cup chopped fresh cilantro leaves
- 2 tablespoons crumbled cotija cheese
- Optional toppings: pickled jalapenos, red pepper flakes, sour cream
Instructions
- Preheat the oven to 350°F (175°C).
- Place the tortillas in double stacks on a large baking sheet.
- Spread 1/2 cup of salsa on each tortilla stack.
- Make a well in the center and crack an egg into each well.
- Season with salt and pepper, then sprinkle with grated cheese.
- Bake for 10-12 minutes until the egg whites start to set.
- While baking, heat olive oil in a skillet and cook the cherry tomatoes until blistered.
- Switch the oven to broil for 1-3 minutes to finish cooking.
- Top pizzas with blistered tomatoes, avocado slices, cilantro, cotija cheese, and any optional toppings.
- Serve hot and enjoy!
