Loaded Tortilla Pizza


Ingredients

  • 4 burrito-size flour tortillas
  • 1 cup thick salsa
  • 2 large eggs
  • 1/2 cup grated Mexican-blend cheese
  • 1 tablespoon extra virgin olive oil
  • 1 cup cherry tomatoes
  • 1 small avocado, pitted and sliced
  • 1/4 cup chopped fresh cilantro leaves
  • 2 tablespoons crumbled cotija cheese
  • Optional toppings: pickled jalapenos, red pepper flakes, sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the tortillas in double stacks on a large baking sheet.
  3. Spread 1/2 cup of salsa on each tortilla stack.
  4. Make a well in the center and crack an egg into each well.
  5. Season with salt and pepper, then sprinkle with grated cheese.
  6. Bake for 10-12 minutes until the egg whites start to set.
  7. While baking, heat olive oil in a skillet and cook the cherry tomatoes until blistered.
  8. Switch the oven to broil for 1-3 minutes to finish cooking.
  9. Top pizzas with blistered tomatoes, avocado slices, cilantro, cotija cheese, and any optional toppings.
  10. Serve hot and enjoy!
