Maple Cinnamon Baked Oatmeal with Streusel


Ingredients:

Oatmeal:

  • 1 3/4 cups milk
  • 2 tablespoons brown sugar
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups old-fashioned rolled oats

Topping:

  • 2 tablespoons melted butter  
  • 3 tablespoons packed light brown sugar
  • 1 1/2 teaspoons cinnamon

Glaze:

  • 1 ounce softened cream cheese
  • 1 tablespoon milk
  • 1/8 teaspoon vanilla extract
  • 5 tablespoons confectioners' sugar

Instructions:

  1. Preheat the oven to 350°F (176°C). Grease an 8×8" baking dish.
  2. In a large bowl, whisk together milk, brown sugar, sugar, vanilla extract, and salt. Stir in oats.
  3. Pour the oatmeal mixture into the prepared baking dish and spread evenly.
  4. In a small bowl, combine the topping ingredients. Sprinkle evenly over the oatmeal mixture.
  5. Bake for 25-30 minutes, or until the oatmeal is set and the topping is golden brown.
  6. Let cool for a few minutes before adding the glaze.
  7. In a small bowl, beat together cream cheese, milk, vanilla extract, and confectioners' sugar until smooth. Drizzle over the cooled oatmeal.
  8. Serve warm and enjoy!
