Spicy Egg-Crusted Bread: Easy & Flavorful Breakfast


Ingredients
• 2 large eggs
• 2 tbsp red onion, finely minced
• 1 tsp green chili, finely minced (jalapeno or your favorite spicy chili)
• ¼ tsp ground turmeric
• ½ tsp kosher salt
• 2 tbsp cilantro, finely chopped
• ⅓ cup milk or water
• 2 slices bread (sourdough, multigrain, or whole wheat)

To Serve:
• 2 tbsp ketchup, green chutney, or sriracha sauce

Instructions

  1. Whisk onion, green chili, turmeric, salt, cilantro, and milk in a wide bowl. Add eggs and whisk for a minute.
  2. Dip one slice of bread in the egg mix, pressing with a fork to absorb it. Flip and repeat.
  3. Heat a non-stick or cast-iron pan with ½ tsp oil. Place the soaked bread on the pan, and add extra onions from the egg mixture on top.
  4. Cook on medium heat until golden brown on the bottom, about 1 minute. Flip and cook the other side.
  5. Serve hot with ketchup, sriracha, or green chutney.
