Ingredients:
- 1 cup chorizo and bean mixture
- 2 flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup Greek yogurt
- Salt and pepper to taste
- 2 tablespoons melted butter
- Additional sour cream for serving
Instructions:
- Prepare tortillas: Spread sour cream and Greek yogurt on one half of each tortilla.
- Fill tortillas: Top with grated cheddar cheese, chorizo and bean mixture, and additional salt and pepper.
- Fold: Fold empty half of tortilla over filling and press down to seal.
- Air fry: Preheat air fryer to 375°F (190°C). Brush tortillas with melted butter. Air fry for 5-7 minutes, or until golden brown and heated through.
- Serve: Serve with additional sour cream.
Optional additions:
- For extra heat: Add a pinch of red pepper flakes or crushed red pepper to the chorizo and bean mixture.
- For a smoky flavor: Add a teaspoon of smoked paprika to the chorizo and bean mixture.
- For a tangy kick: Add a tablespoon of lime juice or orange zest to the sour cream and Greek yogurt mixture.
- For additional vegetables: Add sautéed onions, peppers, or spinach to the tortilla wraps.
