- 230 g cold butter

Instructions:
Prepare the Dough:
- Combine flour, sugar, salt, and cold butter in a food processor.
- Pulse until crumbly.
- Gradually add water, pulsing until a dough forms.
- If making by hand, grate butter and add water gradually.
- Divide dough in half, flatten, wrap in foil, and refrigerate for at least 1 hour.
Assemble the Galettes:
- Roll out chilled dough into circles.
- Top with mozzarella, tomatoes, and nectarine slices.
- Fold edges of dough over.
- Brush with beaten egg and sprinkle with salt and pepper.
Bake:
- Preheat oven to 220°C (428°F).
- Place galettes on a baking sheet.
- Bake for 30 minutes, or until golden brown.
- Sprinkle with thyme leaves.
