Crispy Tomato Galettes

Ingredients:

  • 320 g flour
  • 1 tbsp sugar
  • Pinch of salt
  • 230 g cold butter
  • 8 tbsp cold water
  • Mozzarella slices
  • Tomatoes
  • Nectarine slices
  • Egg, beaten
  • Salt and pepper
  • Thyme leaves

Instructions:

  1. Prepare the Dough:

    • Combine flour, sugar, salt, and cold butter in a food processor.
    • Pulse until crumbly.
    • Gradually add water, pulsing until a dough forms.
    • If making by hand, grate butter and add water gradually.
    • Divide dough in half, flatten, wrap in foil, and refrigerate for at least 1 hour.
  2. Assemble the Galettes:

    • Roll out chilled dough into circles.
    • Top with mozzarella, tomatoes, and nectarine slices.
    • Fold edges of dough over.
    • Brush with beaten egg and sprinkle with salt and pepper.
  3. Bake:

    • Preheat oven to 220°C (428°F).
    • Place galettes on a baking sheet.
    • Bake for 30 minutes, or until golden brown.
    • Sprinkle with thyme leaves.

Tips:

  • For a crispier crust, preheat the baking sheet before placing the galettes on it.
  • You can customize the toppings with your favorite vegetables, cheeses, and herbs.
  • For a sweeter galette, add a drizzle of honey or maple syrup before serving.
