Beef and caramelised onion sausage rolls


Ingredients:

  • 600g beef sausages, skins removed
  • ½ cup (140g) store-bought caramelized onion relish
  • 1 tablespoon tomato paste
  • Sea salt and cracked black pepper
  • 2 sheets frozen puff pastry, thawed and halved
  • 1 egg, lightly beaten
  • Poppy seeds, for sprinkling
  • Tomato relish, to serve  

Instructions:

  1. Preheat oven: Preheat your oven to 200°C (400°F).
  2. Combine filling: In a bowl, mix the sausage meat, caramelized onion relish, tomato paste, salt, and pepper.
  3. Divide and shape: Divide the sausage mixture into 4 equal portions and roll each portion into a sausage shape.
  4. Assemble the rolls: Place each sausage shape down the center of a pastry half. Brush the edges of the pastry with egg.
  5. Roll and seal: Roll up the pastry to enclose the sausage, ensuring the seam is underneath. Place the rolls on lightly greased oven trays lined with non-stick baking paper.
  6. Brush and sprinkle: Brush the tops of the rolls with egg and sprinkle with poppy seeds.
  7. Bake: Bake for 25 minutes, or until golden brown and cooked through.
  8. Serve: Serve the sausage rolls with tomato relish.
