Delicious Caesar Pasta Salad Recipe


Ingredients:

  • 10-12 cups chopped romaine lettuce
  • 1-2 cups cooked pasta (your choice)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup shaved Parmesan cheese
  • 1 cup sourdough croutons
For the Caesar dressing:
  • 1/2 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 anchovy fillet (optional)
  • Salt and pepper to taste

Instructions:

  1. Cook pasta: Cook pasta al dente according to package directions.
  2. Make croutons: Toast sourdough bread in olive oil until golden brown and crispy.
  3. Make Caesar dressing: In a blender, combine Greek yogurt, garlic, Parmesan cheese, Dijon mustard, white wine vinegar, olive oil, lemon juice, and anchovy (if using). Blend until smooth.
  4. Assemble salad: In a large bowl, combine chopped romaine lettuce, cooked pasta, grated Parmesan cheese, and croutons.
  5. Toss with dressing: Pour Caesar dressing over salad and toss to coat.
  6. Serve: Serve immediately, topped with shaved Parmesan cheese.

Optional additions:

  • For extra flavor: Add a pinch of red pepper flakes or crushed red pepper to the Caesar dressing.
  • For a smoky flavor: Add a teaspoon of smoked paprika to the Caesar dressing.
  • For a tangy kick: Add a tablespoon of lemon juice or orange zest to the Caesar dressing.
  • For additional vegetables: Add cherry tomatoes, cucumbers, or red onion to the salad.
