Healthy Chocolate Filled Cookies


Ingredients:

  • 100 grams spelt flour (or wheat flour)
  • 25 grams small oat flakes
  • 20 grams neutral oil
  • 50 grams unsweetened applesauce
  • 40 grams sugar
  • 2 tablespoons dark chocolate chips
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • Spread (e.g., nut butter, jam)

Instructions:

  1. Combine dry ingredients: In a salad bowl, combine spelt flour, oat flakes, sugar, cinnamon, ginger, and salt.
  2. Add wet ingredients: Stir in oil and applesauce until a smooth dough forms. If too dry, add more applesauce. If too sticky, add more flour.
  3. Fold in chocolate chips: Gently fold in chocolate chips.
  4. Roll out dough: On a floured work surface, roll out dough into a rectangle.
  5. Add spread: Spread your choice of spread onto the dough.
  6. Cut and bake: Cut dough into small rectangles. Bake in a preheated oven at 180°C (350°F) for 15 minutes, or until golden brown.
  7. Cool: Let cool on a rack before serving.

Optional additions:

  • For extra flavor: Add a pinch of cardamom or nutmeg to the dry ingredients.
  • For a richer texture: Use brown sugar instead of granulated sugar.
  • For a nuttier flavor: Add chopped nuts (e.g., walnuts, almonds) to the dough.
  • For a gooey center: Underbake the cookies by 1-2 minutes.
