- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 pound short cut pasta (e.g., orecchiette)
- 5 ounces freshly shredded Gruyère cheese
- 1/4 cup freshly shredded Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions:
- Caramelize onions: In a large Dutch oven, melt butter in olive oil over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, until onions are caramelized and dark golden brown, about 30-35 minutes.
- Make sauce: Once onions are caramelized, add garlic, red pepper flakes, soy sauce, and Worcestershire sauce. Cook for 30 seconds.
- Add liquids and seasonings: Add water, beef bouillon, and half of the evaporated milk. Whisk cornstarch with remaining evaporated milk and add to the pot. Bring to a boil, stirring constantly.
- Cook pasta: Add pasta and reduce heat to medium-high. Cook for 20-25 minutes, or until al dente, stirring often.
- Add cheeses: Remove from heat and stir in Gruyère cheese, then Parmesan cheese. Taste and season with salt and pepper if desired.
- Serve: Garnish with fresh parsley and serve immediately.
