One Pot French Onion Pasta


Ingredients:

For the caramelized onions:

  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 large yellow onions, sliced into 1/8-inch thick rings
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

For the sauce:

  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (or more to taste)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon reduced sodium soy sauce
  • 5 1/2 cups water (or beef broth)
  • 1 (12-ounce) can evaporated milk
  • 1/2 tablespoon cornstarch
  • 2 tablespoons beef bouillon (granulated, base, or cubes)
  • 1 tablespoon fresh parsley, minced (or 1 teaspoon dried)
  • 2 teaspoons fresh thyme, minced (or 3/4 teaspoon dried)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper

For the pasta:
  • 1 pound short cut pasta (e.g., orecchiette)
  • 5 ounces freshly shredded Gruyère cheese
  • 1/4 cup freshly shredded Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions:

  1. Caramelize onions: In a large Dutch oven, melt butter in olive oil over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, until onions are caramelized and dark golden brown, about 30-35 minutes.
  2. Make sauce: Once onions are caramelized, add garlic, red pepper flakes, soy sauce, and Worcestershire sauce. Cook for 30 seconds.
  3. Add liquids and seasonings: Add water, beef bouillon, and half of the evaporated milk. Whisk cornstarch with remaining evaporated milk and add to the pot. Bring to a boil, stirring constantly.
  4. Cook pasta: Add pasta and reduce heat to medium-high. Cook for 20-25 minutes, or until al dente, stirring often.
  5. Add cheeses: Remove from heat and stir in Gruyère cheese, then Parmesan cheese. Taste and season with salt and pepper if desired.
  6. Serve: Garnish with fresh parsley and serve immediately.

Optional additions:

  • For extra flavor: Add a pinch of dried oregano or thyme to the sauce.
  • For a smoky flavor: Add a teaspoon of smoked paprika to the sauce.
  • For a tangy kick: Add a tablespoon of lemon juice or orange zest to the sauce.
  • For additional vegetables: Sauté mushrooms or spinach with the onions.
