Ingredients:
- 1 tablespoon olive oil
- 1 pound kielbasa smoked sausage, sliced
- 1/4 cup apple cider vinegar
- 1 large red onion, sliced
- 1 medium green cabbage, cored and sliced
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh parsley
- 1 tablespoon grated Parmesan cheese
Instructions:
- Brown sausage: Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned on all sides. Remove from skillet and set aside.
- Sauté onion: Add onion to skillet and cook until softened.
- Add spices and garlic: Stir in apple cider vinegar, red pepper flakes, salt, and pepper. Cook for 1-2 minutes. Add garlic and cook for 30 seconds.
- Add cabbage: Add cabbage and cook for 3-5 minutes, or until cabbage begins to wilt.
- Deglaze and simmer: Add chicken broth and Dijon mustard. Bring to a simmer. Cook until cabbage is tender but still slightly crisp.
- Return sausage: Return sausage to skillet and heat through.
- Serve: Serve immediately, garnished with chopped parsley and Parmesan cheese.
