Spinach and Cheese Tart


Ingredients:

  • 1 sheet puff pastry
  • 2 cups packed baby spinach
  • 1 shallot, diced
  • 3 cloves garlic, minced
  • 1/2 cup grated Swiss cheese
  • 1/4 cup grated Gorgonzola blue cheese
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh chives, chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare pastry: Roll out thawed puff pastry on a floured surface. Place in a baking pan and press into the sides.
  2. Preheat oven: Preheat oven to 375°F (190°C).
  3. Sauté vegetables: Heat olive oil in a skillet. Sauté shallot until softened. Add garlic and cook for 1 minute.
  4. Add spinach and cheese: Add spinach and cook until wilted. Stir in Swiss cheese, Gorgonzola cheese, and heavy cream. Season with salt and pepper.
  5. Assemble tart: Pour filling into pastry crust. Top with Parmesan cheese and chives.
  6. Bake: Bake for 20-25 minutes, or until golden brown and bubbly.

Optional additions:

  • For extra flavor: Add a teaspoon of lemon zest or orange zest to the filling.
  • For a smoky flavor: Add a pinch of smoked paprika to the filling.
  • For a tangy kick: Add a tablespoon of Dijon mustard to the filling.
  • For additional vegetables: Add mushrooms, onions, or roasted red peppers to the filling.
