TRI TIP TACOS

 


Ingredients:


1-2 lb cooked Tri Tip, cubed (leftovers are ideal)


½ cup white onion, diced


2-3 mangos, diced


2-3 peppers, diced (jalapeño and red Fresno recommended)


1 bunch of cilantro, chopped


Limes (for squeezing)


Salsa of your choice


6-12 corn tortillas



Instructions:


1. Cube the Tri Tip: If not already done, cube your cooked Tri Tip.



2. Prep the produce: Dice the mango, peppers, onion, and chop the cilantro.



3. Warm the tortillas: Lightly brown the corn tortillas in a hot pan. You can use a little oil or keep them oil-free, depending on preference.



4. Assemble the tacos:


Add cubed Tri Tip to each tortilla.


Top with mango, peppers, onion, and cilantro.


Add a spoonful of salsa and a squeeze of fresh lime.
