Baked Eggs in Bread Baskets

Ingredients:

  • 6 whole grain dinner rolls
  • 6 eggs
  • 2 tablespoons melted butter
  • 2 tablespoons heavy cream
  • Kosher salt
  • Freshly ground black pepper
  • Finely chopped fresh herbs (dill, thyme, parsley)
Optional additions:
  • 1/4 cup diced spinach or kale
  • 1/4 cup crumbled feta cheese
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Preheat oven: Preheat oven to 350°F (175°C). Line a sheet pan with foil or parchment paper.
  2. Prepare rolls: Slice the top off of each roll (about a quarter of the roll). Set the tops aside. Use a small, sharp knife to cut around the edge of the roll, leaving a 1/4-inch rim. Gently "wedge" out the center of the roll, creating a basket. If necessary, use your fingers to compress the inner walls to make the opening larger.
  3. Plug holes: If there are any small holes, use a small piece of bread to plug them.
  4. Brush rolls: Brush the rims and outsides of each roll with melted butter. Place on the prepared pan.
  5. Crack eggs: Break an egg into a small bowl, checking for any tiny bits of shell. Carefully pour it into the "bread basket." Repeat for all rolls and eggs.
  6. Bake: Bake for 18-22 minutes, or until eggs are set. Remove from oven and let sit for 2-3 minutes.
  7. Serve: Sprinkle with fresh herbs. Serve with optional toppings (spinach, kale, feta cheese, red pepper flakes).

Optional additions:

  • For extra flavor: Add spinach, kale, feta cheese, or red pepper flakes to the egg mixture.
  • For a richer texture: Use heavy cream and melted butter.
  • For a spicier kick: Add a pinch of red pepper flakes or cayenne pepper to the egg mixture.
