Cranberry Tuna Salad


Ingredients:

  • 2 cans (5 oz./140g) tuna, in spring water
  • 1/4 cup dried cranberries
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/4 cup fresh parsley, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
Optional additions:
  • 1/4 cup chopped walnuts or almonds
  • 1/4 cup crumbled feta cheese
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Drain tuna: Drain the tuna and add it to a mixing bowl.
  2. Combine ingredients: Add dried cranberries, celery, red onion, mayonnaise, Dijon mustard, lemon juice, parsley, salt, and pepper.
  3. Mix: Mix everything together and adjust seasoning to taste.
  4. Optional additions: Stir in chopped walnuts, crumbled feta cheese, or red pepper flakes for extra flavor.
  5. Serve: Serve immediately or refrigerate in an airtight container for up to 3 days.
