Easy Fish Stew Recipe


Ingredients:

  • 2 tablespoons olive oil
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 lb wild cod
  • 15 oz can diced tomatoes
  • 1/2 cup coconut milk
  • 1/4 cup sour cream (optional)
  • 2 tablespoons tomato paste
  • 1 whole red, green, and yellow bell pepper, sliced in rounds
  • 1 pinch sea salt and ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh cilantro
Optional additions:
  • 1/4 cup chopped fresh basil
  • 1/4 cup crumbled feta cheese
  • 1/4 teaspoon ground cumin

Instructions:

  1. Sauté vegetables: Heat olive oil in a large skillet or cast iron pan. Add onion and garlic, cook until fragrant (3 minutes).
  2. Add tomatoes and spices: Add diced tomatoes, coconut milk, sour cream (if using), tomato paste, salt, pepper, and red pepper flakes. Stir and cook for 3 minutes.
  3. Add fish and peppers: Add sliced peppers and cod chunks. Cover and simmer for 10-12 minutes, or until fish is cooked through. Carefully turn the cod halfway through cooking if needed.
  4. Garnish and serve: Garnish with fresh cilantro and serve.

Optional additions:

  • For extra flavor: Add chopped fresh basil, crumbled feta cheese, or ground cumin.
  • For a richer texture: Add a dollop of Greek yogurt or a spoonful of crème fraîche.
  • For a spicier kick: Increase the amount of red pepper flakes.
