Easy Focaccia Muffins

Ingredients:

  • 12 frozen dinner rolls
  • Cherry tomatoes, sliced (to taste)
  • Black olives, sliced (to taste)
  • Green olives, sliced (to taste)
  • Feta cheese, crumbled (to taste)
  • 6 teaspoons grated Parmesan cheese
  • 1 1/2 teaspoons dried oregano
  • Dash of salt
  • 12 teaspoons olive oil
Optional additions:
  • 1/4 cup chopped spinach or kale
  • 1/4 cup crumbled goat cheese
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Let dough rise: Place frozen dinner rolls into ungreased muffin cups. Cover with plastic wrap and let dough rise at room temperature until doubled in size (approximately 6 hours or as per package instructions).
  2. Indent dough: Gently press down on each risen roll with your fingertips to create several indents, replicating the appearance of focaccia bread.
  3. Drizzle with olive oil: Drizzle each roll generously with olive oil, ensuring the oil fills the indents.
  4. Add toppings: Add your desired toppings (cherry tomatoes, black olives, green olives, feta cheese, grated Parmesan cheese, dried oregano, salt, and optional additions like spinach, kale, goat cheese, or red pepper flakes).
  5. Preheat oven: Preheat oven to 350°F (175°C).
  6. Bake: Bake rolls in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
  7. Cool and serve: Let rolls cool in the muffin tin for a few minutes before transferring to a serving plate. Serve warm and enjoy!
