Easy Oatmeal Apple Banana Low Fat Muffins.


Ingredients:

  • 1 1/2 cups rolled oats
  • 1 cup whole wheat flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 2 large eggs
  • 4 tablespoons vegetable oil
  • 6 tablespoons sugar
  • 2/3 cup milk
  • 1 cup mashed ripe banana
  • 1 cup grated unpeeled apple
Optional additions:
  • 1/2 cup chopped nuts (e.g., walnuts, pecans)
  • 1/4 cup raisins or dried cranberries
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease or line muffin tins.
  2. Combine dry ingredients: In a large bowl, whisk together oats, flour, baking powder, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In a separate bowl, whisk together eggs, oil, sugar, and milk.
  4. Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Add fruit and optional ingredients: Stir in mashed banana, grated apple, and any optional ingredients.
  6. Bake: Fill muffin tins two-thirds full with batter. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve: Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Optional additions:

  • For extra flavor: Add chopped nuts, raisins, dried cranberries, or vanilla extract.
  • For a richer texture: Use a combination of butter and oil.
  • For a healthier twist: Use whole wheat flour and a natural sweetener like honey or maple syrup.
