Ingredients:
- 6 bone-in pork chops, thick-cut
- 2 tablespoons cooking oil, plus more for drizzling
- Kosher salt and ground black pepper to taste
- 1 tablespoon paprika
- 2 red apples, cored and sliced
- 1 medium yellow onion, sliced
- 1 tablespoon fresh garlic, minced
- 1/2 cup apple cider vinegar
- 1 tablespoon liquid smoke (optional)
- 1/2 cup coarse ground Dijon mustard
- 3/4 cup honey
- 1/8 teaspoon cayenne pepper
- 1/4 cup fresh parsley, minced
- 1/4 cup chopped walnuts or almonds
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions:
- Prepare pork chops: Trim excess fat from pork chops. Drizzle with a small amount of vegetable oil and massage it into them. Season with kosher salt, ground pepper, and paprika.
- Sear pork chops: Heat a large skillet over medium-high heat with 2 tablespoons of cooking oil. Sear pork chops until lightly browned on each side (about 1-2 minutes per side). Do not overcook. Remove from skillet and allow to rest on a wire rack.
- Sauté apples and onions: Drain oil from skillet and add another tablespoon or so of cooking oil. Add apples and onions and sauté over medium heat until 3/4 cooked (about 6-8 minutes). Add minced garlic and sauté for 1 minute.
- Make sauce: Add apple cider vinegar, liquid smoke (if using), coarse ground Dijon mustard, honey, cayenne pepper, and 1/4 cup of minced parsley. Mix until combined and simmer until sauce thickens slightly. Season to taste with kosher salt and ground pepper.
- Finish and serve: Add pork chops back to the pan and baste in the sauce until they reach 145°F. The chops should be moist and tender. Garnish with remaining parsley and serve with your favorite sides.
Optional additions:
- For extra flavor: Add chopped walnuts or almonds, ground cinnamon, or ground nutmeg to the sauce.
- For a sweeter sauce: Increase the amount of honey.
- For a spicier kick: Add a pinch of cayenne pepper or red pepper flakes.
