Ingredients:
- 1 pound calamari/squid, sliced
- 1 tablespoon olive oil
- 3 cloves garlic, sliced
- 1 tablespoon tomato paste
- 1 tablespoon hot sauce/Sriracha
- 1 cup pepperoncini, whole (or other preserved or fresh peppers)
- 1 cup tomato sauce
- 1/2 cup water
- Fresh lemon, sliced
- Fresh parsley, minced
- 1/4 cup chopped fresh basil
- 1/4 cup crumbled feta cheese
- 1/4 teaspoon red pepper flakes
Instructions:
- Prepare calamari: Wash and dry calamari thoroughly. Slice calamari thinly. Season with salt, pepper, and red pepper flakes. Squeeze with fresh lemon and set aside.
- Sauté aromatics: Turn Instant Pot to sauté mode. Add oil and garlic, cook for 1-2 minutes until fragrant.
- Add sauce ingredients: Add tomato paste, hot sauce, tomato sauce, and water. Stir.
- Combine ingredients: Add calamari and pepperoncini. Stir.
- Cook under pressure: Cover Instant Pot, lock lid, turn off sauté mode, and cook on high pressure for 15 minutes. Let pressure release naturally for 10 minutes.
- Serve: Transfer calamari stew to a bowl. Garnish with fresh parsley and fresh lemon juice.
Optional additions:
- For extra flavor: Add chopped fresh basil, crumbled feta cheese, or red pepper flakes.
- For a richer texture: Add a dollop of Greek yogurt or a spoonful of crème fraîche.
- For a spicier kick: Increase the amount of red pepper flakes or hot sauce.
