Ingredients
- 8 ounces cheese tortellini
- 1 pound sweet potatoes, peeled and chopped into 1-inch dice
- 2 tablespoons olive oil
- Salt and pepper
- 10 ounces spicy Italian sausage
- 5 cloves garlic, minced
- ½ teaspoon Italian seasoning
- ¼ teaspoon smoked paprika
- 1 red bell pepper, medium
- 1 green bell pepper, medium
- 1 yellow bell pepper, medium
- 4 green onions, chopped
- Salt and pepper to taste
- Red pepper flakes
Instructions
- Roast sweet potatoes: Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, and pepper on a parchment-lined baking sheet. Roast for 15-20 minutes.
- Cook tortellini: Bring a large pot of water to a boil. Add tortellini and cook according to package instructions. Drain.
- Sauté sausage and peppers: Heat a large cast iron skillet over low-medium heat. Add crumbled sausage, Italian seasoning, and smoked paprika. Sauté for 5-10 minutes, breaking the meat into small pieces, until browned and cooked through. Remove cooked sausage to a plate, reserving the juices in the skillet.
- Cook bell peppers: In the same skillet, add chopped bell peppers and cook for 10 minutes until softened.
- Combine ingredients: Add back the cooked sausage, roasted sweet potatoes, chopped green onions, and cooked tortellini. Stir to reheat and combine. Season with salt, pepper, and red pepper flakes.
