Maple Chicken with Sweet Potatoes


Ingredients

Sautéed Sweet Potatoes:

  • 3 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon butter

Maple Chicken:

  • 1 pound chicken tenderloins
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon butter
  • ¼ ounce fresh thyme

Instructions

Sauté Sweet Potatoes:

  1. Peel sweet potatoes and slice into thin round slices.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sliced potatoes in a single layer and sprinkle with salt and pepper.
  4. Cook for 5 minutes, then flip and cook on medium-low heat for another 5 minutes.
  5. Add butter and stir to coat. Remove skillet from heat.

Make Maple Chicken:

  1. Season chicken tenderloins with salt and pepper.
  2. Heat an empty cast-iron skillet over medium heat for 3 minutes.
  3. Add olive oil and chicken. Cook for 5 minutes without moving.
  4. Flip chicken and cook on medium-low heat for 5 more minutes, or until cooked through.
  5. Add maple syrup and butter to the skillet with chicken. Stir to coat.
  6. Combine maple chicken with cooked sweet potatoes in the same skillet and top with fresh thyme.
