Ingredients
Sautéed Sweet Potatoes:
- 3 medium sweet potatoes
- 2 tablespoons olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 1 tablespoon butter
Maple Chicken:
- 1 pound chicken tenderloins
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 tablespoon butter
- ¼ ounce fresh thyme
Instructions
Sauté Sweet Potatoes:
- Peel sweet potatoes and slice into thin round slices.
- Heat olive oil in a large skillet over medium heat.
- Add sliced potatoes in a single layer and sprinkle with salt and pepper.
- Cook for 5 minutes, then flip and cook on medium-low heat for another 5 minutes.
- Add butter and stir to coat. Remove skillet from heat.
Make Maple Chicken:
- Season chicken tenderloins with salt and pepper.
- Heat an empty cast-iron skillet over medium heat for 3 minutes.
- Add olive oil and chicken. Cook for 5 minutes without moving.
- Flip chicken and cook on medium-low heat for 5 more minutes, or until cooked through.
- Add maple syrup and butter to the skillet with chicken. Stir to coat.
- Combine maple chicken with cooked sweet potatoes in the same skillet and top with fresh thyme.
