Ingredients:
- 3 tablespoons vegetable oil or canola oil
- 4 boneless, skinless chicken breasts (about 1 pound each)
- Cooking spray
- Salt and freshly ground black pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon smoked or sweet paprika
- 2 tablespoons unsalted butter
Instructions:
- Prepare the chicken: Pat chicken breasts dry with paper towels. Drizzle with a bit of oil and season with a mixture of salt, pepper, garlic powder, onion powder, basil, and paprika.
- Sear the chicken: Heat 1 1/2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 chicken breasts and cook undisturbed for 5-7 minutes per side, or until internal temperature reaches 165°F.
- Add butter: Flip the chicken breasts and add 1 tablespoon of butter to the skillet. Swirl the butter around to coat the chicken.
- Rest and serve: Remove the chicken from the skillet and let it rest for 5 minutes before slicing and serving.
- Repeat: Repeat steps 2-4 with the remaining chicken breasts.
