Butternut Squash and Black Bean Orzo with Sausage and Spinach

Ingredients

Roasted Butternut Squash:

  • 2 cups butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • Salt and pepper

Other Ingredients:

  • 1 cup uncooked orzo
  • 1 tablespoon olive oil
  • 12 ounces cooked sausage (such as Cajun sausage, andouille sausage, or smoked sausage)
  • 15 ounces canned black beans, rinsed and drained
  • 5 ounces fresh spinach
  • Fresh thyme

Instructions

  1. Roast the butternut squash: Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 30 minutes.
  2. Cook the orzo: Combine 2 cups water and 1 cup orzo in a medium saucepan. Bring to a boil, then reduce heat to medium-low. Cook for 10 minutes, stirring frequently. Cover and let rest for 5 minutes off heat.
  3. Cook the sausage: Heat 1 tablespoon olive oil in a large skillet over medium heat. Slice cooked sausage and add to the skillet. Cook for 5 minutes per side, or until browned.
  4. Assemble the dish: Add spinach to the sausage and cook until wilted. Stir in black beans, cooked orzo, and roasted butternut squash. Season with salt and pepper. Top with fresh thyme!
