Ingredients
Roasted Butternut Squash:
- 2 cups butternut squash, peeled, seeded, and cubed
- 1 tablespoon olive oil
- Salt and pepper
Other Ingredients:
- 1 cup uncooked orzo
- 1 tablespoon olive oil
- 12 ounces cooked sausage (such as Cajun sausage, andouille sausage, or smoked sausage)
- 15 ounces canned black beans, rinsed and drained
- 5 ounces fresh spinach
- Fresh thyme
Instructions
- Roast the butternut squash: Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 30 minutes.
- Cook the orzo: Combine 2 cups water and 1 cup orzo in a medium saucepan. Bring to a boil, then reduce heat to medium-low. Cook for 10 minutes, stirring frequently. Cover and let rest for 5 minutes off heat.
- Cook the sausage: Heat 1 tablespoon olive oil in a large skillet over medium heat. Slice cooked sausage and add to the skillet. Cook for 5 minutes per side, or until browned.
- Assemble the dish: Add spinach to the sausage and cook until wilted. Stir in black beans, cooked orzo, and roasted butternut squash. Season with salt and pepper. Top with fresh thyme!
