Ingredients:
- 8 ounces mozzarella balls (or "ciliegine"), drained of brine
- 3 tablespoons finely chopped parsley
- 2 tablespoons finely chopped basil
- 1 tablespoon finely chopped oregano
- 2 teaspoons thyme leaves
- 1 teaspoon lemon zest
- 2 (heaping) tablespoons diced roasted red peppers (or multi-colored peppers)
- 2 cloves garlic, pressed through garlic press
- ¾ cup olive oil
- 1/4 teaspoon salt
- Pinch red pepper flakes (optional)
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup crumbled feta cheese
- 1/4 teaspoon honey or maple syrup
Instructions:
- Prepare ingredients: Gather and prep all ingredients. Place drained mozzarella balls in a medium-large bowl.
- Make marinade: In a smaller bowl, combine chopped herbs, lemon zest, diced roasted red peppers, garlic, olive oil, salt, and red pepper flakes (if using). Mix until well blended.
- Marinate mozzarella: Pour marinade over mozzarella balls and gently combine until cheese is well coated. Cover with plastic wrap and marinate in the fridge for at least 2-3 hours (or up to 24 hours for bolder flavor).
- Serve: Spoon mozzarella balls into a serving dish with some of the marinade drizzled over top. Allow them to come to room temperature for about 15 minutes. Serve with toothpicks or small forks.
Optional additions:
- For extra flavor: Add chopped sun-dried tomatoes, crumbled feta cheese, or honey/maple syrup.
- For a spicier kick: Increase the amount of red pepper flakes.
