Marinated Mozzarella Balls

Ingredients:

  • 8 ounces mozzarella balls (or "ciliegine"), drained of brine
  • 3 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped basil
  • 1 tablespoon finely chopped oregano
  • 2 teaspoons thyme leaves
  • 1 teaspoon lemon zest
  • 2 (heaping) tablespoons diced roasted red peppers (or multi-colored peppers)
  • 2 cloves garlic, pressed through garlic press
  • ¾ cup olive oil
  • 1/4 teaspoon salt
  • Pinch red pepper flakes (optional)
Optional additions:
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup crumbled feta cheese
  • 1/4 teaspoon honey or maple syrup

Instructions:

  1. Prepare ingredients: Gather and prep all ingredients. Place drained mozzarella balls in a medium-large bowl.
  2. Make marinade: In a smaller bowl, combine chopped herbs, lemon zest, diced roasted red peppers, garlic, olive oil, salt, and red pepper flakes (if using). Mix until well blended.
  3. Marinate mozzarella: Pour marinade over mozzarella balls and gently combine until cheese is well coated. Cover with plastic wrap and marinate in the fridge for at least 2-3 hours (or up to 24 hours for bolder flavor).
  4. Serve: Spoon mozzarella balls into a serving dish with some of the marinade drizzled over top. Allow them to come to room temperature for about 15 minutes. Serve with toothpicks or small forks.

Optional additions:

  • For extra flavor: Add chopped sun-dried tomatoes, crumbled feta cheese, or honey/maple syrup.
  • For a spicier kick: Increase the amount of red pepper flakes.
