Ingredients:
- 4 (6-ounce) skinless halibut fillets
- 2 large garlic cloves, pressed through garlic press
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon lemon zest
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh dill, chopped for garnish
- Lemon slices or wedges, on the side
- 1/4 cup chopped spinach or kale
- 1/4 cup crumbled feta cheese
- 1/4 teaspoon red pepper flakes
Instructions:
- Preheat oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare marinade: In a small ramekin, combine garlic cloves, Dijon mustard, lemon juice, lemon zest, paprika, salt, and pepper. Add olive oil, 1 tablespoon at a time, and blend until combined.
- Marinate halibut: Place halibut fillets on the prepared baking sheet and brush with marinade. Allow to marinate for 10-20 minutes (optional).
- Bake: Bake halibut fillets for 10-12 minutes, or until opaque in the center and still moist. Switch oven setting to "broil" and broil for 2-3 minutes for a bit of color.
- Serve: Sprinkle with fresh dill and serve with lemon slices or wedges.
Optional additions:
- For extra flavor: Add chopped spinach, kale, or crumbled feta cheese to the marinade.
- For a spicier kick: Add red pepper flakes to the marinade.
- For a richer texture: Serve with a dollop of sour cream or Greek yogurt.
