- 1 tablespoon diced fresh cilantro
Instructions:
- Preheat oven: Set your oven to 375°F (190°C).
- Combine meatloaf ingredients: In a large bowl, mix together the ground beef, chorizo, onions, green bell pepper, oats, corn kernels, cilantro, garlic cloves, eggs, salt, cumin, and chile powder. Work the mixture until thoroughly combined.
- Shape meatloaf: Transfer the mixture to a baking sheet and form it into a rectangular loaf.
- Prepare chipotle glaze: In a small bowl, combine the chopped chiles in adobo sauce, tomato sauce, minced garlic, and diced cilantro.
- Glaze meatloaf: Spread the chipotle glaze over the top of the meatloaf. Reserve any remaining glaze.
- Bake meatloaf: Place the meatloaf in the preheated oven and bake for about 45 minutes, or until an instant-read thermometer inserted into the center registers 160°F (71°C).
- Serve: Carefully transfer the meatloaf to a serving platter and serve with any remaining glaze on the side.
Tips:
