One Pot Broccoli Cheddar Salmon Orzo


Ingredients:

  • 4 salmon fillets
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 brown onion, finely chopped
  • 4 garlic cloves, minced
  • 1 cup orzo
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup dry white wine
  • 1 small broccoli, cut into florets, then roughly chopped
  • 3 cups chicken broth
  • 1/2 cup half-and-half
  • 1 cup freshly shredded cheddar cheese
  • 1/2 cup freshly grated Parmesan cheese
  • Chili flakes for serving
  • Freshly ground black pepper for serving
Optional additions:
  • 1/4 cup chopped spinach
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup crumbled feta cheese

Instructions:

  1. Season salmon: Season salmon fillets with salt, pepper, smoked paprika, and garlic powder.
  2. Sauté onion and garlic: Heat olive oil and butter in a large skillet over medium-high heat. Add onion and garlic and sauté for 2 minutes, or until fragrant.
  3. Cook salmon: Add salmon fillets to the skillet and cook for 3-4 minutes per side, or until cooked through. Remove from skillet and set aside.
  4. Cook orzo: Add orzo, Italian seasoning, cayenne pepper, and remaining salt to the skillet. Cook for 1 minute. Deglaze with white wine and simmer for 2 minutes, stirring and scraping up the brown bits.
  5. Add vegetables and broth: Add broccoli and chicken broth. Bring to a boil and reduce heat to medium-low. Cook uncovered, stirring occasionally, until orzo is almost al dente and most of the liquid is absorbed, about 10 minutes.
  6. Add dairy and cheese: Stir in half-and-half, shredded cheddar, and grated Parmesan cheese.
  7. Return salmon and serve: Return salmon to the skillet and simmer over low heat for 3 minutes, or until heated through. Top with chili flakes and freshly ground black pepper. Serve immediately.

Optional additions:

  • For extra flavor: Add chopped spinach or sun-dried tomatoes to the skillet with the vegetables.
  • For a richer sauce: Use heavy cream instead of half-and-half.
  • For a tangier taste: Add a tablespoon of lemon juice or lime juice to the sauce.
  • For a spicier kick: Add a pinch of cayenne pepper or red pepper flakes.
