Chicken Fajita Burrito Bowl


Ingredients for 3x Batch:

  • ¾ cup Taco Seasoning
  • 6 tablespoons fresh lime juice
  • 3 tablespoons extra-virgin olive oil
  • 6 pounds boneless, skinless chicken breast, cut against the grain into ½-inch-thick slices
  • 3 red bell peppers, thinly sliced
  • 3 green bell peppers, thinly sliced
  • 3 yellow bell peppers, thinly sliced
  • 3 small red onions, halved and thinly sliced

For Serving:

  • 9 cups Brown Rice, cooked
  • 3 (13.5-ounce) cans black beans, drained and rinsed, warmed
  • Tripled amount of Guacamole
  • Tripled amount of Sour cream
  • Tripled amount of Pico De Gallo
  • Fresh cilantro leaves
  • Lime wedges

Instructions:

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Marinate Chicken and Veggies: In a large bowl, combine taco seasoning, lime juice, and olive oil. Add chicken, bell peppers, and onion, tossing to coat.
  3. Bake: Spread the mixture on a rimmed baking sheet. Bake for 15-20 minutes, or until chicken is cooked through. For a char, broil for an additional 3 minutes.
  4. Serve: Divide rice among serving bowls. Top with chicken, veggies, beans, guacamole, sour cream, pico de gallo, cilantro, and lime wedges.
