Ingredients for 3x Batch:
- ¾ cup Taco Seasoning
- 6 tablespoons fresh lime juice
- 3 tablespoons extra-virgin olive oil
- 6 pounds boneless, skinless chicken breast, cut against the grain into ½-inch-thick slices
- 3 red bell peppers, thinly sliced
- 3 green bell peppers, thinly sliced
- 3 yellow bell peppers, thinly sliced
- 3 small red onions, halved and thinly sliced
For Serving:
- 9 cups Brown Rice, cooked
- 3 (13.5-ounce) cans black beans, drained and rinsed, warmed
- Tripled amount of Guacamole
- Tripled amount of Sour cream
- Tripled amount of Pico De Gallo
- Fresh cilantro leaves
- Lime wedges
Instructions:
- Preheat Oven: Preheat oven to 375°F (190°C).
- Marinate Chicken and Veggies: In a large bowl, combine taco seasoning, lime juice, and olive oil. Add chicken, bell peppers, and onion, tossing to coat.
- Bake: Spread the mixture on a rimmed baking sheet. Bake for 15-20 minutes, or until chicken is cooked through. For a char, broil for an additional 3 minutes.
- Serve: Divide rice among serving bowls. Top with chicken, veggies, beans, guacamole, sour cream, pico de gallo, cilantro, and lime wedges.
