Baked Falafel Bowl


Ingredients:

  • 30 baked falafel
  • 3 cups Mediterranean roasted cauliflower
  • 3 roasted red peppers
  • 3 cups cabbage mix
  • ¾ cup cucumber, sliced
  • ¾ cup diced tomato
  • ¾ cup diced red onion
  • 6 tablespoons lemon juice
  • 3 pinches sea salt
  • ¾ cup feta
  • 3 avocados
  • ¾ cup tahini
  • ¾ cup hummus

Instructions:

  1. Bake the Falafel: Bake the frozen falafel in a preheated 350°F (177°C) oven for 20-30 minutes, flipping halfway through.
  2. Roast the Red Pepper: Toss the red pepper with olive oil and salt. Roast in a preheated 350°F (177°C) oven for 15 minutes.
  3. Prepare the Onion-Tomato Mixture: Combine diced onion, tomatoes, lemon juice, and salt.
  4. Assemble the Salad: In a large bowl, layer the cabbage mix. Top with baked falafel, onion-tomato mixture, cucumber, roasted cauliflower, sliced avocado, roasted red pepper, feta, and hummus. Drizzle with tahini and serve.
