Ingredients:
- 30 baked falafel
- 3 cups Mediterranean roasted cauliflower
- 3 roasted red peppers
- 3 cups cabbage mix
- ¾ cup cucumber, sliced
- ¾ cup diced tomato
- ¾ cup diced red onion
- 6 tablespoons lemon juice
- 3 pinches sea salt
- ¾ cup feta
- 3 avocados
- ¾ cup tahini
- ¾ cup hummus
Instructions:
- Bake the Falafel: Bake the frozen falafel in a preheated 350°F (177°C) oven for 20-30 minutes, flipping halfway through.
- Roast the Red Pepper: Toss the red pepper with olive oil and salt. Roast in a preheated 350°F (177°C) oven for 15 minutes.
- Prepare the Onion-Tomato Mixture: Combine diced onion, tomatoes, lemon juice, and salt.
- Assemble the Salad: In a large bowl, layer the cabbage mix. Top with baked falafel, onion-tomato mixture, cucumber, roasted cauliflower, sliced avocado, roasted red pepper, feta, and hummus. Drizzle with tahini and serve.
