Cilantro-Lime Chicken Bowls with Peach Salsa


Ingredients:

For the Peach Salsa:

  • 3 medium peaches, pitted and diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 3 green onions, finely chopped
  • 1/2 bunch cilantro, chopped
  • 2 tablespoons lime juice
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt

For the Cilantro-Lime Chicken:

  • 1 pound boneless, skinless chicken breasts, sliced
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1 tablespoon butter
  • Fresh cilantro, for garnish
  • Lime wedges, for garnish

Instructions:

  1. Make the Peach Salsa: Combine all ingredients in a bowl and mix well.
  2. Season the Chicken: Season the chicken with paprika, chili powder, salt, and pepper.
  3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through. Add lime juice and honey, and cook until the sauce thickens.
  4. Serve: Serve the chicken over rice with the peach salsa. Garnish with cilantro and lime wedges.
