Indian-Spiced Grilled Chicken Skewers

Ingredients:

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 2 teaspoons grated ginger
  • 2 tablespoons soy sauce
  • 2 teaspoons yellow curry powder
  • 1 teaspoon turmeric
  • 2 teaspoons coriander
  • 2 teaspoons chili powder
  • 1/4 cup coconut milk
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons brown sugar
  • Red pepper flakes (optional, for spice)
  • Chopped cilantro
  • Lime wedges
  • Chopped peanuts

Instructions:

  1. Marinate Chicken: Combine all ingredients in a bowl. Add chicken and marinate for at least 30 minutes, or up to 24 hours.
  2. Grill or Skewer:
    • Grill: Grill chicken skewers over medium-high heat for 8-10 minutes per side, or until cooked through.
    • Skillet: Cook chicken in a skillet over medium-high heat, turning occasionally, until cooked through.
  3. Serve: Serve immediately, garnished with cilantro, lime wedges, and peanuts.

Optional: Serve with rice, naan, or a side salad.
