Coconut Key Lime Pie Smoothie

Ingredients:

  • 1 large frozen ripe banana, sliced
  • Zest from 1 small lime or key lime
  • 2 tablespoons fresh lime or key lime juice
  • ½ cup vanilla or coconut Greek yogurt  
  • ½ cup light coconut milk (or milk of choice)
  • 1/2 cup fresh spinach
  • ½ teaspoon vanilla extract
  • Optional: 1-2 teaspoons maple syrup or honey  

For Serving:

  • Extra lime wedge
  • Graham Cracker Crumbs
  • Whipped cream
  • Shredded Toasted Coconut

Instructions:

  1. Prep the Glass: Wet the rim of the glass with a lime wedge and dip it into graham cracker crumbs.
  2. Blend the Smoothie:
    • Add all ingredients (frozen banana, lime zest, lime juice, yogurt, milk, spinach, and vanilla extract) to a high-powered blender.
    • Blend until smooth, adding more milk to thin if necessary.
    • Taste and add sweetener if desired.
  3. Serve: Pour the smoothie into the prepared glass, top with whipped cream, and sprinkle with shredded toasted coconut.

Tips:

  • Dairy-Free Option: Use a coconut-based yogurt or a dairy-free vanilla yogurt.
  • Protein Boost: Add a scoop of vanilla protein powder.
  • Spinach: Feel free to add more spinach for a nutrient boost.
