- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Season Pork Chops: Season the pork chops with salt, pepper, and thyme.
- Layer Ingredients:
- Place sliced onions and minced garlic in the bottom of the crockpot.
- Add the seasoned pork chops on top of the onion and garlic.
- Arrange the halved potatoes around and on top of the pork chops.
- Add Liquid:
- Whisk together chicken broth and Worcestershire sauce.
- Pour the mixture over the ingredients in the crockpot.
- Cook:
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
- Serve: Serve hot, garnished with fresh herbs if desired.
Tips:
- Bone-In vs. Boneless: Bone-in pork chops tend to be more flavorful and juicy.
- Potato Variety: You can use any type of potato, but smaller potatoes like Yukon Gold or red potatoes work well.
- Flavor Variations: Add other herbs and spices, such as rosemary, sage, or paprika, to customize the flavor.
- Thickening Sauce: If you prefer a thicker sauce, remove the pork chops and potatoes and thicken the remaining liquid with a cornstarch slurry.
- Side Dish: Serve with a side of steamed vegetables or a green salad.
